Tasty Tuesday: Cheesy Baked Salmon + Weekly Dinner Menu.

I will admit, salmon is not my favorite type of fish to eat. I am more of a white, mild fish eater. But Cameron likes it, and since marriage is all about compromise, I make it every now and then. I used this recipe last night and it's definitely been my favorite way to cook salmon so far! Can't really go wrong with anything covered in cheese though, right?
 

Cheesy Baked Salmon

2 lb salmon fillet
1 large onion, thinly sliced (I didn't use)
salt, ground black pepper, to taste
¼-1/3 cup mayonnaise
2 Tablespoons lemon juice
½-1 Tablespoon Dijon mustard
1-2 garlic cloves, minced
¼ cup Parmesan cheese, finely shredded
⅓-1/2 cup Mozzarella cheese, finely shredded
 
For two pieces of salmon, I cut the sauce recipe in half.
 
Preheat the oven to 400 degrees Fahrenheit. Line a rimmed baking sheet with aluminum foil.
 
Place the salmon fillet on the prepared baking sheet. Season with salt and pepper. Layer the thinly sliced onion on top of the fish, so it covers the surface of the fish completely.
 
In a small bowl, combine the mayonnaise, lemon juice, mustard and garlic. The mixture should be thin enough to easily spread over the onions. Cover the surface of the onions with the creamy mayo mixture and spread it out evenly. Top with the finely grated cheese.
 
Bake in the preheated oven for 15-18 minutes, then broil for 2-5 minutes, until the cheese is golden brown.

A glorious weekend.

Pretty much the perfect weekend was had.
 
Friday night, we invited a couple of friends over to enjoy some oysters. I never really get full from eating oysters, but Friday night, I got full. That's how many I ate. They were sooo good and salty.
 
 
 
Emily and Kate brought over items to make s'mores. Those were also tasty and delicious.

Saturday, I had a work wedding, but before I went in, Cameron and I tried out a new (to us) restaurant called Tattooed Moose. It has been featured on The Food Network's "Diners, Drive-Ins And Dives." I had heard so many great things about this place so we were excited to try it. I wish I would have taken pictures of our food, but I hadn't eaten breakfast that morning so I inhaled my Cuban sandwich the second it was set in front of me. Cameron ordered their famous duck club and we got a side of the duck fat fries and duck fat gravy. (Yes, I have my gym bag packed for after work.) Holy yum, can't wait to go back.
Watched the South Carolina / Missouri game from work and in true Gamecock style, it was a game sure to test your heart. Fumbles, interceptions, you name it. We tried to give the game away. That is, until our first string quarterback came into the game (he got hurt in our game last weekend) late in the third quarter. Going into the 4th quarter, we were down 17-0! Our team finally came together and at the end of the 4th quarter, it was tied 17-17!!! Fast forward to the second overtime (we both scored touchdowns during the first overtime)...Gamecocks were held just to a kicking a field goal. Next up, Missouri's turn...I'll just leave you to the video clip to get the full effect.
 
 
Maybe the happiest we've ever seen Spurrier.
 Sunday, we hit up another new (to us) restaurant with Caroline and Andy for brunch. This time, it was Rutledge Cab Co. I took a moment to document my lunch this time...
BLT eggs benedict with a side of grits.
Another place I can't wait to try again!
After lunch, Cameron and I ran some errands, then went over to his parents' house to celebrate October birthdays. Our nieces made and decorated the delicious cookie cake. :)

Friday Five.

A year ago today, I was walking the streets of Charleston (no, not like that) with my wedding dress on..hair and make up done..feeling like a model. Mom, sister, BFF, Brady, and amazing photographer by my side. Having my bridal portraits taken! I seriously felt like a model that day. Was so nervous that someone I knew was going to drive by and see my in my wedding dress, but the attention of the strangers walking by definitely made me feel like a celeb. haha!

Before yesterday, I used the same bronzer (Bare Minerals) for probably over 5 years. When I ran out of my last little bit, I decided it was time to switch it up. Enter Smashbox Bronze Lights bronzer. Really liking it so far. It's not shimmery and can be built up to be as dark as you'd like. It also has a nice, subtle, fresh smell. Winner in my book!
 
{five}
Oyster season (and thankfully, now weather) is upon us! Kicking it off tonight by having a few friends over to enjoy some and I cannot wait!! I even (politely) passed up Cameron's offer of taking me out to eat at a nice restaurant tonight just because I wanted oysters that bad! Rain check, Cameron? :)
I used to be scared of the big slimy ones, but now I embrace them.
I do not embrace the super short haircut anymore though.

Three Years on Tiffany - The Office.

 This month marks the 3rd year that Cameron and I have been in our house! It's crazy to think that's we've been living here that long, and even crazier to go back and look at pictures from when Cameron bought the house! Talk about a night and day difference.

So I thought it would be fun and show pictures of each room as they progressed, and how they look today!


This is how we found it.

 Painted stripes in the laundry room in July of 2011, and new tile was installed by Cameron and Eric in December of 2011.
 

Desk purchased off of Craigslist in January of 2012.
I had the pleasure of hauling that thing inside with Cameron, which resulted in many chiropractor visits.
 
Diplomas finally framed and hung in February of 2012.
Added the bookshelf in March of 2012.
Finally looking like an office!
 
Added the curtains and the rug in July of 2012.

 Moved the leather chair into the office in December of 2012 to make room for the Christmas tree, and decided we liked it better in there!
 
So here it is today!

Tasty Tuesday: Apple Cider Sangria + Weekly Menu.

Before we get started with this yummy drink recipe, just wanted to let y'all know that I've updated my recipes tab above! Check it out for an easy way to find all of the recipes that have been featured on Tasty Tuesday!
 
Now on to the booze...
 
One of my favorite drinks during the Fall/Winter is apple cider. Pair it with a delicious summer sangria and you've got the best of both seasons!
 
Apple Cider Sangria

1 large bottle of Pinot Grigio
2 cups fresh apple cider
1/2 cup brandy
1 tbs sugar
1/2 apple, sliced
Apple slices, cranberries + fresh thyme to garnish 
1 liter club soda 
 
Mix together all ingredients above, stir and top with club soda. Add 1/2 of an apple sliced and a handful of cranberries and chill for 3 hours or more. 
 
Makes one pitcher.

Quick Weekend Recap.


Keeping it short and sweet this Monday morning for a quick weekend recap.
 
Friday I didn't have to be to work until late, so Brady and I decided to test out his Halloween costume that came in the mail the day before. What do y'all think? :)
Rawr.
Saturday was an early morning of getting ready for our annual Dogtoberfest event at Freshfields! Swung by Dunkin Donuts to pick up donuts for the staff. Managed to keep myself from eating the entire 2 dozen, keeping myself to only one.
 
Set up from 9:30am-1pm and then the event was underway! There was a doggy costume contest, wine tasting, beer, vendors and raffles. All money raised will be split evenly and given to all of the dog rescues that participated! What a fun event!

Sunday was a much needed low key day. I woke up and put this pot roast in the crockpot. It claims to be "Best Pot Roast Ever," but we were not convinced. Next time, I'll be trying Pioneer Woman's recipe. Did some laundry, then made Caroline's chocolate chip blondie recipe. After that, Brady and I went for a long walk with Emily and her pups. Perfect Sunday!

Big congrats to Christina on her little bun in the oven!! She and Matt are definitely one of the cutest couples in the blog world (and I'm sure in real life) and they are going to be awesome, loving parents!

Sleep.
This being my busy event month at work, I get to sleep in a lot during the week since I don't have to be at work until the afternoon. It has been so nice to wake up when I please, make a cup of coffee, and relocate to the couch for Kelly & Michael.
 
{three}
On the contrary to number one, working out in the morning and having lots of energy for the rest of the day.
Wednesday when I had a full day off, I made it to the 9:15 body pump class and afterwards, did not sit down (other than for a quick lunch) until Cameron got home from work. I was so motivated for a change and it was awesome! Laundry, organizing, grocery shopping, you name it. I will admit, ever since Emily (aka my work out buddy) got pregnant, I have been super slack about going to the gym..and I can definitely tell when I look in the mirror.

I haven't been as into the pumpkin craze this year as I have in the past. I haven't even had a pumpkin spice latte yet! Gasp! But for some reason, Sunday I was craving a pumpkin smoothie.
